The end of July and August is the best time to pick chanterelles. These mushrooms are well-known in Belarus. They are easy to pick and easy to cook. In Russian language we call these mushrooms “lisichki”. In direct translation it means “little foxes”. And that is right. Due to their bright orange color chanterelles really seem like little foxes hiding in a grass.
Mushrooming is a pleasant activity itself. People spend all the day round in the forest. It is a great opportunity to switch off from office work and city jam. And then they have another reward: tasty dinner with mushroom dishes.
My favorite recipe is fried chanterelles with onion and sour cream. It is good combination to potatoes. The easiest way to clean chanterelles from the pieces of ground and grass is to put them into a pan, pour boiling water and leave for a while. After that all the garbage is easy to remove. If you have picked too much chanterelles and can`t eat all of them at once, the best way to store chanterelles is to freeze them.
